Soup season is here. 天氣漸趨涼爽之際, 正是喝湯的好時節。
試做一道新食譜上看起來十分吸引人的濃湯,主要材料是超級健康食物
排行榜上第一名的Sweet Potato地瓜,味道獨特層次豐富微辣的
Sweet Potato and Coconut Soup地瓜椰奶濃湯,
全植物性的和平食材不含蛋奶特別適合Vegan者來享用呢!
Adapted from a recipe in Veggie Feasts.
作法很簡單和一般濃湯類似。
Ingredients: Serves 2
橄欖油1tbsp
洋蔥半個
大蒜1瓣
薑末1/2tsp
紅辣椒半根
地瓜350g
素高湯300ml (自然高湯亦可)
椰奶200g
海鹽+黑胡椒適量
檸檬汁+少許皮半顆
堅果 少許
堅果 少許
簡要中文作法如下:
熱鍋加適量橄欖油用小火炒洋蔥,大蒜末,薑末,檸檬皮,紅辣椒等。
加入地瓜塊翻炒幾分鐘,再加入高湯,椰奶,檸檬汁及鹽和黑胡椒
調味後轉小火燉煮約15分鐘直到地瓜熟軟為止。
一半放涼倒入果汁機打成濃稠狀,倒回鍋中再加熱調味即完成了。
搭配蔬食三明治就是最棒的輕食餐!

Method:
Heat the oil in a saucepan, add the onion, garlic, ginger, lime rind and
chilli and cook over a low heat, stirring frequently, for 5 minutes until
the onion is softened. Add the sweet potatoes and cook, stirring frequently,
for 5 minutes.
Stir in the stock, coconut milk, lime juice and salt and pepper. Bring to
boil, then reduce the heat, cover and simmer gently for 15 minutes, or
until the potatoes are tender.
Transfer half the soup to a food processor or blender and process until
smooth. Return to the pan and cook until wilted. Adjust the seasoning
and serve immediately.
