Vegetarian Bangers and Mash 英式素香腸佐薯泥




我們家今年新春期間的年菜還是以素食為主,很平常但有特別
為我家老爺準幾樣他愛的英式料理 Cottage Pie, Welsh Rarebit, 
English Breakfast一一上了餐桌


情人節到了問老爺還有什麼想吃我還沒試做過但不會太難的,
他說之前回英國探訪親友時吃到英式Vegetarian bangers and mash
好好吃喔!

心裡念念不忘又吃不到可難過啦! Ready-made素食在英國各大超市
都有賣而且標示明白清楚對茹素者十分方便相對地跟台式素食
做法味道大不同英式素食bangers怎麼做呢?

先來介紹bangers是什麼它其實是大家熟知的sausages香腸啦!

Why do the British call sausages bangers?
為什麼英國人把香腸叫 bangers?

The word bangers for sausages was first used during WWII. Due to a 

food shortage they were filled with so much water that when they 
were cooked they popped and made a banging sound.
據傳是源自第二次世界大戰因為物資缺乏香腸裡除了少許碎肉
油脂外還含大量水分因此高溫煎烤香腸時會爆出如"bang"
響而得名。

我的Vegetarian Bangers材料暨做法: 


Ingredients: Serves 2
1 tablespoon olive oil  (橄欖油)
1 leek, trimmed and finely chopped (蒜苗)
2 teaspoons chopped coriander (香菜)
1/2 tablespoon dried herbs (乾燥香料)
75g of cheddar cheese, grated  (切達起司)
75g wholemeal breadcrumbs (全麥麵包粉
)可自製
1 egg, beaten (雞蛋)
25g wholemeal breadcrumbs for coating
grape seed oil, for shallow frying
salt and black pepper

Method:
1. Heat the olive oil in a frying pan, add the leek & coriander and cook 
   over a medium heat,stirring frequently, for about 5 minutes. 
    Leave to cool.
2.Combine the leek mixture, Cheddar, breadcrumbs, herbs and salt and 

   pepper. Stir in the egg and mix together to form a soft dough. 
   Shape into 4 sausages and roll each one in the breadcrumbs.
3.Heat a little grape seed oil in a frying pan, add the sausages and fry 
   over a medium heat, turning frequently, for 10 minutes until golden 
   and cook through.
4. Serve immediately with the mash & onion gravy.









Homemade Vegetarian Bangers and Mash with Onion Gravy 

(自製素香腸佐薯泥及洋蔥醬汁)



另外準備Mashed potatoes馬鈴薯泥和豌豆再淋上特製的onion gravy
洋蔥醬汁整套搭配起來很單調以我這常拿眼睛吃東西的看來
實在不吸睛,本想在煮豌豆時用多些彩虹蔬果來配色變化,但老爺
說這樣才像是英國人吃的家常料理啦,還是不加修飾忠實呈現。

我第一次自製的bangers 賣相雖不那麼專業好看,onion gravy也不夠

濃郁醬汁少了點,還好馬鈴薯泥鬆軟滑潤好入口。一向很捧場的
老爺吃完後開心稱道: It's scrumptious!  呵哈成功了耶! 
這道料理不是台灣人的菜,但仍名列我的最愛口袋名單之一,下次
來試點不同口味。
